New restaurant offers unique fusion of Indian and French cuisine with organic, locally-sourced menu. SILK Dinner Lounge opens after nearly five years in development
Situated in the urban neighbourhood between Gastown and Railtown, SILK Dinner Lounge offers a menu that blends together the flavours of traditional Indian and French cuisine. The doors of the new eatery may just be opening here in Vancouver, but its story began years ago.
Gary Sidhu has been collecting, designing and building the SILK Dinner Lounge space for nearly five years. He has travelled all over the world curating the décor, and bringing his vision to life within the walls of the space. Everything in SILK is handcrafted and inspired from his Indian roots, from the elephant candle holders to the crystal chandeliers that hang above the bar, and all furniture has been custom-made and designed by Gary and his SILK team.
The menu offers favourites like Spinach Paneer, free-range Beef Tenderloin and traditional Indian curries made from hand-milled spices. All dishes are a combination of fresh and organic meats, locally-sourced produce and hand-made sauces. All menu items are prepared from scratch as they are ordered, using the freshest ingredients, and do not include refined oils, salts or sugars.
Owner Gary Sidhu grew up helping his father tend to the family crops in India and learning the traditional farming methods for organic farming. He lost his father at a young age, but continued his father’s legacy with the farm alongside his siblings. Sidhu then moved to Canada with only $200 to his name, and continued his career in farming, with a dream of one day opening a restaurant. His desire to use his vast knowledge of cooking traditional Indian dishes has turned into a one-of-a-kind dining experience rooted in true fresh organic, daily farm-to-plate cuisine.
SILK Dinner Lounge is based on five pillars: organic food and ingredients, high quality cocktails with fresh homemade organic juices, nourishing atmosphere, excellent customer service and calming music.
